With researching what most experienced cooks know you can’t brown food unless you preheat your skillets. So the iron skillet is a logical choice, especially in cast iron skillet, unless you require stainless to make a style point or you can afford copper. Yes cast iron cookware is heavy, therefore look for cast iron lodge skillets with handles on both sides when purchasing large iron skillets for cast iron cooking.  A good skillet pan, properly seasoned and cared for, can last for generations. Most of our skillets are pre seasoned cast iron skillet.
